Yummy Veggie Pasta

I love this recipe! It is so simple...and you know I am all about simple! The kids were out of school yesterday, so we spent the day outside enjoying Earth Day 2009. It was great fun, but it left me pretty tired by dinner time. Simple Veggie Pasta to the rescue!

Beans and Pasta:

1 1/2 cups uncooked macaroni pasta
1/4 cup veggie broth
1 zucchini, cut and sliced
1/2 chopped onion
1 can (15 1/2 ounces) butter beans - rinsed and drained
1/2 can chopped Italian tomato - or fresh tomato chopped and seeded
2 teaspoons Cajun Seasoning
Garlic flavored Olive Oil
Grated Parm. cheese
salt

Prepare the pasta according to the package and rinse and drain the beans. Heat the broth in a skillet (medium heat) then add the zucchini and onion. Cut for about 5 minutes. Stir in the beans, tomato and seasoning. Drizzle a small amount of the oil in and let it cook for another 3 to 5 minutes. Drain the pasta. Return the pasta to the pot and add the veggie mixture. Drizzle with more of the oil, add the cheese and salt to taste.
